The grapes are harvested from the best plots of the wine growers from Adega de Borba and only in years when the quality of the grapes reaches high levels of excellence for the region to produce this true ex-libris from Adega de Borba. In the winery, the grapes were collected in small quantities, de-stemmed and smoothly crushed. The alcoholic fermentation was performed with a prolonged maceration for 10 to 15 days in order to extract all the aromas and flavours from the grapes. To complete this extraction a 21-days post-fermentative maceration process was performed.
The malolactic fermentation was conducted in stainless steel deposits. To achieve a greater complexity in terms of organoleptic characteristics, the wine aged for 12 months in 3rd and 4th year French oak barrels and in exotic wood barrels, after which it aged for 6 months in the bottle. Varieteis Aragonez Alicante Bouschet Castelão Trincadeira. It will go well with Red meat (Lamb) GameTraditional sweets
